Ingredients:
4 Chicken Breasts - bones and skin removed
1 Garlic Clove - crushed
1 table spoon Lemon Juice
1 table spoon chooped Parsley
1/2 cup Mushrooms
1 pack low fat yoghurt
1 sliced onion
Salt and Pepper
1 table spoon Mustard
1/2 cup Chicken Broth
Directions:
Cut chicken breasts into wide strips, season with lemon juice, salt and pepper. Then cut each onion slice in half and rub to get onion strips.
In a non stick skillet, add onion strips and stir oven medium heat then add garlic and stir, add chicken strips and stir, add a few drops of water to give a golden brown color.
Add yoghurt, mustard, salt and pepper and stir to mix all ingredients well. Then broth and leave to boil.
Reduce heat and leave to cook for 15-20 minutes or until chicken is done. Add some water if sauce is too thick.
While chicken is being cooked, stir mushrooms in a non stick skillet over medium heat for 2-3 minutes, then add to chicken and stir to mix well. Sprinkle parsley on surface at serving.
